Easy Meals to Make in a Hotel with Just a Fridge and Microwave
If you're staying in a hotel for more than just a night, it can be nice to have a few "homecooked" meals during your trip.
Dining out gets expensive and after a long day it can be more relaxing to just enjoy your hotel room with these easy meals.
When we're staying in a condo rental with an oven, we love to bake these meatball subs but if you're in a hotel room with just a fridge and microwave, you can easily tweak this recipe.
Pick up a bag of frozen meatballs and defrost them in the microwave. Add a jar of tomato sauce and pour it over the thawed meatballs. Heat on High until everything is warmed through.
Ramen is a college dorm staple because it is so easy to make with just a microwave but it isn't exactly the healthiest meal on its own.
This easy beef stir fry with ramen noodles could be tweaked to use pre-cooked meat from the deli department. Add a bag of frozen veggies to the mix for extra bulk.
Normally quesadillas are griddled but in a pinch you can easily make them right in the microwave.
Heat the tortillas flat with the cheese over the top. Fold the quesadilla into place once it is heated up so the melted cheese sticks it together.
Add seasoned chicken from the grocery store salad bar or a shredded rotisserie chicken.
Did you know you can cook a potato right in the microwave?? Once it is softened, stir in shredded cheese and deli ham for these easy stuffed potatoes.
Upgrade your evening meal with a fresh caprese sandwich. Pick up sliced ciabatta bread at the grocery store, add a fresh tomato and fresh mozzarella. Don't forget the basil!
Make your own salads at night in the hotel room. You can pick up salad greens and dressing for a lot less money than what you'd pay at the salad bar. Top it with grilled chicken from the deli department or even cooked shrimp.
My homemade buffalo chicken salad has lots of fresh veggies in the mix but you could tweak it on the go and just use a shredded rotisserie chicken and a bottle of prepared buffalo sauce. Use it to top a bag of salad greens and add cherry tomatoes.
I love to make homemade tzatziki when we're at home but it is often easily found prepped right at the grocery store.
Pick up some pitas, a rotisserie chicken, fresh tomato and a red onion, along with a tub of tzatziki. You could heat the chicken and the pita in the microwave and then build your wrap.
Want to feel fancy in your hotel room? Instead of eating your meal as a sandwich, pick up a baguette and make yourself bite-sized crostini with roast beef, horseradish sauce, and tomatoes on top!
At home we love to grill these meatball skewers with fresh pineapple and a homemade teriyaki sauce.
But in a hotel, this would make an easy tweak dinner.
Heat your meatballs in the microwave. Pick up the bagged rice and heat that, too.
Top both with a drizzle of prepared teriyaki. Add a bag of frozen veggies and a can of pineapple chunks. YUM.
At home, we sometimes do a "fend for yourself" or "Yo-Yo Night" (you're on your own). I made a list of all the easy favorites I give the kids as options.
Most of the meals on this list would also work for making in a hotel room with just a fridge and microwave.
